remove fitech, but set aside to monitor AFR?

I know weird, but I'm down to my last fix (new O2 sensor) before I remove it and put carb back. It would help to tune carb If I can see AFR numbers. So remove fuel lines, dismount throttle body, set it on fender and monitor AFR??
